- 3 sweet potatoes peeled, cut into 1 inch pieces
- ¼ cup butter melted
- ½ tsp ground cardamom
- ¼ tsp ground cinnamon
- ¼ tsp ground ginger
- ¼ tsp ground nutmeg
- ½ tsp vanilla bean paste
- 2 tbsp maple syrup
- ½ cup dark brown sugar
- ¼ tsp salt
- 2 tbsp crushed pecans
Preheat oven to 400F.
In a large bowl, mix all the ingredients together except for the sweet potato cubes.
Now, Toss in the sweet potatoes and mix to fully coat them.
Transfer to a medium-sized casserole dish. Cook for 30-35 minutes.
